Potato Latke Pancakes
Having traveled to Israel 7 times with members from our church, we thoroughly enjoyed the Palestinian foods, along with some of the traditional fares of the Israeli people. This classic potato latke is part of the celebration of Hanukkah and has become a holiday favorite for our family, with our son Judah doing the cooking.
Ingredients
8 large russet potatoes
2-6 eggs
1/4 cup flour of choice
1/2 tsp salt
1/2 tsp pepper

Directions
Peel and then Grate the potatoes
place grated potatoes in a cheesecloth and twist until rid of most of the liquid is removed. Mix in other ingredients adding more eggs as needed to bind.
Coat a pan with oil, form into patties and then cook on medium-high heat until golden brown on both sides.
