I continue to be surprised by the many recipes I can create using einkorn wheat. I asked my daughter to use her incredible scone recipe with my einkorn flour. If you enjoy a treat but want it to be tasty and healthy, this is it.
2 cups all-purpose einkorn flour
1 tbsp baking powder
3 tbls sugar
1/4 tsp salt
6 tbls cold unsalted butter
1/2 cup half & half
zest from one lemon
1/2 cup of currants
3 1/2 tsp of finely ground earl grey tea leaves
Mix all the dry ingredients together and place in a blender. Add the cold butter and pulse until you have a crumbly consistency.
pour into a mixing bowl
mix the egg and half&half before adding to the dry ingredients. make a small well in the middle of the dry ingredients and gently stir in the wet ingredients.
mix in currants as you stir
unfold dough onto a lightly floured surface and knead gently (don't over-knead, keep crumbly) into a flat circle about 10-12 in across
cut into desired shapes and brush with some extra half and half and sprinkle with sugar before baking in an oven of 400 degrees for 12-15 minutes or until golden.
