Fermented Carrots
Fermented carrots are a simple and delicious snack that can be used in dips or as a healthy treat that is both salty and crunchy.
Recipe
​
1/4 cup sauerkraut juice
fill half of the container w/non chlorinated water
3 knobs of ginger
1 tbls of salt
shake or stir the mixture
cut carrots to size of jar
add herbs of choice (cilantro/dill/oregano etc)
Pack the jar as tight with carrot spears as possible
Make sure the liquid covers the carrot spears
add a glass weight if possible
Seal the jars with an airlock
Let sit on counter for at least a week
