Einkorn No-Knead

Einkorn wheat is the ancient grain that was a staple in man's diet for thousands of years.This wheat has never been hybridized and stands alone as the only wheat in its original form. It is now being grown in Italy and more recently United States.


5 cups einkorn Flour

1/2 tsp salt

1 1/2 cups water

1 tbsp honey

1 tbsp butter

1 tbsp coconut oil

1 1/2 tsp yeast


Dissolve half of your water with your butter and honey together and then cool with the  rest of the water so that it's just barely warm.  Once dissolved mix the 1 1/2 tsp yeast.

You're going to take your liquid and create a well in the flour and salt mixture.  Then you will stir the dough until the water is absorbed and the mixture looks similar to a bran muffin mix. Cover in plastic and then let set for at lest half an hour.  The dough should double in 30-40 minutes.  You're going to lightly oil your pan and then let sit for another half and hour with a plate over the pan.

Preheat the oven to 375 degrees and bake for 35-40 minutes.
