Einkorn Belgium Waffles

Belgium Waffle breakthrough with einkorn whole wheat. Now I feel like I can splurge on these delicious einkorn waffles. I'm back to eating waffles since my wife Trisha started using my einkorn whole wheat flour. 


1 package or 2 1/4 - 3 tsp dry yeast

2 cups lukewarm milk

4 eggs separated 

1 tsp vanilla

1/2 cup melted butter or oil of choice

2 1/2 cups einkorn flour (sift and stir bran back in)

2 tbls coconut sugar (or cane sugar)

1/2 tsp sea salt 


sprinkle yeast over warm milk and stir. Beat eggs yolks and add to yeast mixture with vanilla. sift flour, salt, sugar and add to liquid ingredients. Then stir in melted butter and fold thoroughly. beat the egg whites until stiff. carefully fold into batter. let stand in a warm place for 45-60 minutes. Preheat waffle maker while batter is resting. Fill waffle maker according to your preference and enjoy!
