Einkorn Banana Walnut Bread
 

Packed with nutrients and flavor, you won’t sacrifice taste to produce a great loaf. Whole wheat einkorn flour, and adding to the sweetness is only 2 TBS of maple syrup and ½ tsp. of organic monk fruit powder. This loaf doesn’t last in our house.

Ingredients

DRY INGREDIENTS
295 grams einkorn whole wheat (approx. 2 ¼ cups)
½ tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. monk fruit (organic optional)
½ - ¾ cup walnuts, or nut of choice
WET INGREDIENTS
2 large eggs
6 Tbsp. olive oil
2 Tbsp. applesauce or yogurt
2 Tbsp. maple syrup
1½ bananas mashed
1 large apple chopped fine
1 tsp. vanilla optional
DIRECTIONS
Stir all the dry ingredients together, until mixed well, then add walnuts. In a separate bowl mix eggs, olive oil, maple syrup, applesauce and vanilla. Pour mashed banana and chopped apple into this mixture and blend together. Pour the wet mixture into the dry ingredients and stir until mixed together. Pour your batter into an oiled 8 inch loaf pan, and cook in a pre-heated oven at 350 degrees for 55-60 minutes. Let cool in pan for several minutes, and empty pan onto a cooling rack.
