Einkorn Artisan Bread

Eat einkorn for nutrition and flavor; my grandchildren love it. Each time I create a new loaf, I am further impressed at this ancient grain. You won’t be disappointed once you start incorporating einkorn wheat into your lifestyle.


5 cups einkorn flour

1 tbls sugar 

1 tsp sea salt 

1/2 tsp yeast 

3/4 cup milk of choice

1 tbls butter

3 tbls coconut oil or oil of choice

1 tbls olive oil or oil of choice

1.5 tbls of honey

1 tsp lemon juice

1/2 cup of water


Place all dry ingredients in a bowl and Stir. then in a saucepan on low heat mix all of the wet ingredients until warm. put wet ingredients in a bowl and then add dry.  Mix for ten minutes, the dough will be very sticky. put plastic wrap over dough and leave for 4-5 hours. (Optional: After it has rested you can add raisins and 1/2 chopped nuts of choice). Now remove dough from bowl and work flour into it, you will probably end up folding in about a 1/4 of a cup of flour. shape the dough into a round loaf and let dough rest 30 minutes on parchment paper. while dough is resting place a cooking pot and lid in the oven at 450 and pre-heat for 30 minutes. scour 3 lines into the top of the dough and take pot from oven, place parchment paper with dough into hot pot. place back into oven, reducing heat to 400 degrees and bake for 40 minutes with lid on.
