Eggs, Farm to Table

Farm fresh eggs taste great and they are better for you. I learned from a chef in my church how to prepare eggs in a new way. Look for farms that offer fresh eggs in your area. The drive may end up helping you slow the pace a little.

Ingredients

four eggs

1/3 cup of water

butter or oil for pan

​

Directions

Whisk eggs and water together. pour into lightly buttered/oiled pan on medium-high heat. take spatula and gently press edges inward letting the egg fill in the spaces created. Once the egg begins to firm, add a little water for steam, put a lid on and reduce heat to medium-low for about a minute. Remove from heat and let finish cooking with the lid on.

Optional: sheep cheese, cheese, salt, pepper, vegetables
